These are bowl-shaped, crispy pancakes made from fermented rice flour and coconut milk, often served with a cracked egg cooked in the center. To order these delicacies, you can simply use the phrase "Mata [Dish name] ekak denna" (මට [Dish name] එකක් දෙන්න - maʈa [Dish name] ekak denna), which means "Give me one [Dish name]." Exploring these typical dishes is not just about eating; it is about experiencing the cultural melting pot of the island. Locals are incredibly proud of their culinary heritage and will be thrilled to see a foreigner eagerly trying a spicy Kottu or a crispy egg hopper instead of sticking to standard tourist sandwiches.
